AJ received his training to practice Holistic Health Counseling at the Institute for Integrative Nutrition, the world’s largest nutrition school, which is the only nutrition school integrating all the different dietary theories combining the knowledge of traditional philosophies with modern concepts like the USDA food pyramid, the glycemic index, the Zone diet, and raw foods. AJ also received certification as a Live-Foods Instructor, which he earned after completing a hands on educational apprenticeship at The Tree of Life Rejuvenation Center; known world wide for its foundation in spirituality and living foods, as a leading fasting and detoxification center. Founded by Dr. Gabriel Cousens, M.D., diplomat of the American Board of Holistic Medicine. After completing school, AJ realized he has developed an insatiable love of raw vegan desserts. He had an especially strong attraction to raw cacao, the beginnings of all chocolate. This led him to develop his business The Chocolate Conspiracy. On a self taught journey, AJ learned the production and manufacturing techniques to refine cacao without using refined sugar or dairy into a fine artisan product. This has made for an excellent adventure in chocolate!
Celebration of the Hand was started by The Temporary Museum of Permanent Change and Craft Lake City in the Summer of 2012 as a way to highlight and showcase the work of local artisans participating in the Craft Lake City DIY Festival. The Celebration of the Hand pieces are installed into steel Plakats, which are adjacent to the sidewalks on the North and South sides of Broadway (300 South) between 200 West and 200 East.
The exhibit is open 24 hours a day, seven days a week and is free to the public.
