Okie Cavier is one of The Crafting Chicks’ favorite recipes because most of the ingredients are pantry staples, making it a quick and easy summer snack!
Ingredients:
1 can SW black beans, rinsed
1 can SW petite-cut tomatoes
1 can black eyed peas
1 can Green Giant white shoepeg corn
1 can original Rotel tomatoes
1/2 bottle Italian dressing
1 green pepper, finely diced
1 red onion, finely diced
All it takes is a few turns of the can opener and you’re almost done. After you’ve added the beans and vegetables to the bowl, mix in a half bottle of the Italian dressing and refrigerate. It’s best served the next day, after the flavors have had a chance to meld. Just be sure you have a big bag of tortilla chips to go with it!
