Recipe of the Month June 2014: Spinach & Orzo Pasta

4419acca-3df6-495b-a9b9-23438b0a7690This month, Craft Lake City’s Volunteer Coordinator, Jen Murdock is sharing her special recipe for Spinach & Orzo Pasta! She loves this recipe for summer potlucks because it is light, refreshing, healthy and easy to make. It compliments most summer dishes, and has always been a hit with her two kids!
Directions:
1 lb. orzo
6 oz. fresh baby spinach
1 lb. sugar plum (or cherry) tomatoes
1/4 cup fresh lemon juice lemon zest to taste
Optional Feta Cheese
Instructions:
Cook orzo in according to package instructions.
Meanwhile, halve tomatoes, and roughly chop spinach. Place in a large bowl.
Drain orzo and immediately add to large bowl. Toss. The heat from the orzo will lightly wilt the spinach.
Zest Lemon into pasta to taste, then squeeze leftover juices from lemon into pasta.
Sprinkle optional Feta Cheese on top.
